From biodynamically farmed Sylvaner vines, macerated whole-cluster for 5 days of spontaneous maceration, followed by gentle pressing. In Farid's own words, "this wine relies solely on the life present on its berries, and nothing else." The gentle maceration gives the Sylvaner a unique balance and expression. On the nose, scents of peach and apricot, whose colors are reflected in the glass. As it opens up, fresh herbaceous and balsamic notes of eucalyptus and mint emerge. It enters the mouth soft, with a pleasant freshness, a subtle tannin, and a nice salinity. A truly outstanding bottle.
