During the 14 days of fermentation at uncontrolled temperatures, the wine is manually punched down daily. Minimal sulfites are used, and racking is done only when necessary. Indigenous yeasts and grape sugar are employed for bottle refermentation in Spring. White fruit, flowers, and a lively fizz that will make this bottle the perfect companion for an Italian-style aperitivo.
