About 'CC' by Patrick Bouju & Justine Loiseau of La Bòheme
This vintage of CC is an Auvergne Chardonnay blended with Chenin and Sauvignon from the Loire. Spontaneous fermentation with brief skin contact and pressing, aged in used oak barrels, zero added sulfites.
This wine is spot-on—dry, fruity, and super refreshing. The nose immediately shows aromatic complexity with white flowers and yellow fruits, citrus, and candied notes. On the palate, there's a perfect balance between volume and creaminess on one side, acidity and tension on the other. Saline, mineral, long.
Fantastic wine that works perfectly as an aperitif or paired with fish and white meats. Wow!
