Grapes were hand-harvested when fully ripe, aged for 18 months in big wooden barrels, two years of bottle storage after natural clarification. Méthode Champenoise. Zero Dosage. This is a classic looking Sekt that comes with a surprising liveliness and elegance. Beautifully soft perlage, subtle and nice acidity and a lot of power in the mouth. Not exactly fruity, but more on the salty, nut-like and yeasty side. Notes of brioche, butter cookies, but also white pepper and rhubarb.
