Tradition 2023
A thrilling red-white co-ferment blending 50% old-vine Merlot (47 years) with 40% Sauvignon Blanc (24 years) and 10% Muscat Petit Grain and Alexandrie! These diverse varieties grow on limestone sands in Carcassonne and clay-limestone in Marseillan, yielding 33hl/ha of exceptional fruit.
The winemaking is brilliantly creative - a "three-phase" maceration combining pressed juice, manually destemmed grapes, and whole clusters (selected based on health and ripeness) for 42 days in tank, followed by 8 months aging.
Absolute bomb! The nose explodes with Burlat cherry juice, elderberry, blackcurrant bud, and grenadine notes. The palate is smoky and mineral with pronounced cherry character, finishing with pomegranate and blood orange.
