Ouroboros 2022
Wild and elegant, a light red, more than a rosé! From vineyards on a mix of volcanic and hard limestone soils in the Hérault Valley, the grapes are macerated on their skins for 40 days in clay jars, giving the wine an incredibly dense, almost red color. The nose has classic white wine flavors – think hawthorn, citrus, and juicy vine peaches. The only whisper of red is a hint of rose and peony, but once again, on the palate, the wine delivers the tension and minerality of Colombard, with remarkable length and a very light tannic structure. Insane aging potential for this masterpiece!
