Incredible red pét-nat blending 80% Aubun with 20% Carignan and Aramon from limestone sands near Carcassonne! Each bunch is meticulously sorted - less ripe grapes directly pressed while the rest macerates for 25 days. Bottled by gravity during the right moon phase and aged 24 months on lees.
The nose bursts with red fruits and spices, complemented by subtle fern and forest floor notes. Super refreshing at just 10% alcohol, vibrant and lively with a slightly tannic, complex finish. Zero sulfites, zero filtration - pure, natural winemaking at its best! Only 900 bottles produced, so don't miss this rare gem!
